Preparación

To make the cupcakes you will need:

285g lemon cake mix
(the whole envelope)
150g egg (equivalent to 3 eggs
little ones)
150g extra virgin olive oil
150ml of water

Step by Step:

Mix the wet ingredients (eggs, EVOO and water) in a bowl.

Add the mix (contents of the sachet), mix until a homogeneous mass is formed.

Distribute the mixture into muffin tins. Preheat the oven to 240ºC.

Place the muffins on the bottom shelf of the oven. Lower the temperature to 220ºC and bake for 12 minutes.

Let cool. Enjoy eating healthy!
